Coconut Raspberry Fruit Square

Ingredients

  • 1 cup sugar
  • 1 cup coconut
  • 2 eggs
  • 1 cup sugar
  • 4 ounces Butter
  • 1 pinch salt
  • 2 tablespoons cocoa
  • 2 teaspoons baking powder
  • 2 cups flour
  • 2 eggs
  • 8 ounces butter
  • 1 cup mixed fruit

Instructions

  1. Melt 8oz butter + 1 cup sugar until it looks like honey. Cool slightly. Add 2 beaten eggs, 2cups flour, 2tsp BP, 2tbsp cocoa, pinch salt. Place in 2 tins - 1 swiss roll, 1 smaller so both fit on oven shelf! Spread with raspberry jam, then following mixture:- Melt 4oz butter, add 1cup sugar, 2 beaten eggs, 1lg cup coconut, 1cup mixed fruit. Pour over raspberry jam topped slice. Bake at 350/180° 20-30mins until lightly browned. Can easily halve if only want to make 1 sq but does freeze well. Enjoy!
