- 2 1/2 tablespoons dried yeast
- 3 1/2 cups plain flour 520g
- 1/4 cup soft brown sugar
- 1/2 teaspoon salt
- 1 tablespoon mixed spice
- 1 cup sultanas
- 1 egg
- 75 grams Mixed peel (optional)
- 2 tablespoons butter
- 310 milliliters water
- Crosses: 1/2 cup plain flour, 80 ml water
Sugar Glaze: 2 Tbsp water, 1 Tbsp Soft Brown.
Mix ingredients into a dough and place in greased bowl - leave in a warm clean place to rise for 1-2 hours, knead and leave to rise again (optional) - then knead on a well floured surface until elastic and springs back when pressed. Divide into 12 pieces, shape each into a ball and place close together on tray. Cover and leave to rise for 60 minutes.
Tip: Leave to rise longer for a lighter, fluffy bun.
Mix all ingredients together until smooth, pipe crosses over risen dough (use a ziploc bag, cut off the corner & use to pipe crosses).
Bake at 200°C for 20-25 minutes until golden.
Combine ingredients, microwave for 1 minute and brush over hot buns.
