Hot Cross Buns


  • 2 1/2 tablespoons dried yeast
  • 3 1/2 cups plain flour 520g
  • 1/4 cup soft brown sugar
  • 1/2 teaspoon salt
  • 1 tablespoon mixed spice
  • 1 cup sultanas
  • 1 egg
  • 75 grams Mixed peel (optional)
  • 2 tablespoons butter
  • 310 milliliters water


  1. Crosses: 1/2 cup plain flour, 80 ml water Sugar Glaze: 2 Tbsp water, 1 Tbsp Soft Brown. Dough: Mix ingredients into a dough and place in greased bowl - leave in a warm clean place to rise for 1-2 hours, knead and leave to rise again (optional) - then knead on a well floured surface until elastic and springs back when pressed. Divide into 12 pieces, shape each into a ball and place close together on tray. Cover and leave to rise for 60 minutes. Tip: Leave to rise longer for a lighter, fluffy bun. Crosses: Mix all ingredients together until smooth, pipe crosses over risen dough (use a ziploc bag, cut off the corner & use to pipe crosses). Bake at 200°C for 20-25 minutes until golden. Glaze: Combine ingredients, microwave for 1 minute and brush over hot buns.
