Ingredients – 100g of butter, 2 tbsp golden syrup, 1 cup milk, 2 eggs, 2 cups self raising flour, 1/2 cup sugar, flavouring 1 tbsp of cocoa, or sultanas, raisins, walnuts, apricots or bananas to suit
Method – melt butter and golden syrup, add milk and beaten eggs, mix together flour, sugar, and selection of flavourings to bowl, quickly mix in the liquids. Spoon into muffin tins and bake at 200c for about 18 minutes. Nice and moist.
